Bordering on the Pacific Ocean, the small state of Colima enjoys the best of
both culinary worlds: the ocean's bounty of fresh seafood, and the typical ranch
dishes of western Mexico. Colima holds the right to boast of over 3,000 years of
continuous civilization, and the deeply rooted food traditions that go with its
heritage. When the Spaniards arrived during Cortes Pacific campaign beginning in
1522, they found a fresh water supply and volcanic soil. These early explorers
took advantage of the proximity of the volcano, planting sugarcane, coffee,
bananas, avocados, limes and tomatoes, many of which thrive in the rich,
volcanic soil. Colima is also home to many tropical varieties of fruit such as
mango and coconut. Many of these are used to make typical Colima beverages and
candies. Some regional dishes of Colima include: pozole blanco, el tatemado and
chilayo. Some regional beverages are: the tuba, tejuino, bate and ponche de
Granada.
Vendors of Colima-style drinks and candies are easy to find in the shady parks
of the capital city. Colima has a lovely central plaza surrounded by restaurants
offering regional favorites such as tatemado - a dish made with pork marinated
in coconut vinegar. The coastal city of Manzanillo, on the other hand, features
mainly fish and shellfish, it has been called by some a seafood lovers
paradise.
